'water polishing' and 'dry polishing' are simple expressions to describe two different methods of polishing - one uses water as a lubricant and to transport the abrasive polishing material; the other relies on the properties of some powdered solid to provide its own lubrication while simultaneously acting as the abrasive that polishes.
'eliminated….in favour of' means that one thing has been replaced by something else which is considered to be preferable. To be in favour of something is to express a preference for it when compared to something else

Hi . It's hard to answer this as you've taken it out of context. What industry are you talking about? A lot of industries like ceramics, metals etc use dry polishing in their production line to save water.
