艇 and 蝦 are correct! You know difficult 漢字!!! We usually write 船, 舟,えび、エビ or 海老, but I don't know why.
大海老と帆立をとりたいです。You don't need to write every word with 漢字, in this case 獲りたい is correct, but writing with hiragana has no problem.
