I know it is written Día de San Valentín, but how do you call someone your Valentine for the special day. I went with enamorada, was there a better word choice.

To my mind, I prefer to say in Spanish. Yo estuve con mi prometida, or Yo estuve con mi novia o Yo estuve con mi prometida
