我走山路的时候，突然从草丛旁边儿，一只大的雄性綠雉是跳起逃跑的。突然显现的綠雉很多，那它们的行动常常惊动人。我觉得如它们在草丛中就在潜藏着，它们是一定被人没有发现的。

如果我问，大雄性绿雉是怎么逃跑的？你回答是跳起逃跑的。that is correct.
but here you are writing article，so you can say 一只大的雄性綠雉突然跳起来并逃跑了。
2.那它们的行动常常惊动人。
惊动 has the meaning alert，so here I think 惊吓is better，say它们的行动常常会惊吓到路人。
3.我觉得如它们在草丛中就在潜藏着，它们是一定被人没有发现的。
3.1 first pay attention，don't use 它们 two times.
3.2 also don't use 在 twice，you can say 在读书，在上班，but should you say在房间里读书 or 在公司里上班

so what I revised is ：我觉得如果它们一直在草丛中潜藏着，那就一定不会被人发现。

当我在山上走的时候，突然一只大的雄性綠雉从草丛旁边儿跳了出来跑了。有时这里会出现很多綠雉，它们常常惊动人。我觉得它们要是在草丛中潜藏着，一定很难被人发现。
