「も」 is better. Because you have been studing the ONE of other language as the Japanese, already. So, when if you are having the things more then one, it's better you use 「も」 then.  

しかし、時々暑すぎてホテレで留まらなければいけませんでした。Good!

でも、時々、あまりに暑すぎて（or 気温が高すぎて）、ホテルに留まらなければなりませんでした。

(or 避難-ひなん するハメになりました)

When you use しかし, you need to be change the writing style in all of the sentence in that entry "...フランス語を話せる人が多かった為、私はフランス語の勉強もする事ができた。しかし、私はホテルに留まらなければならなかった。時として、40度を超える日もあった程だ。" 

しかしwith ～だ。～た。～である。～であろう。～なのだ。～なのである。～したい。and all.

So, in this case, it's better you use 「でも」 or 「ですが」 etc. ^-^

I can understnd why you wrote 「興味深い」 because I also have been studing English, and I am also making mistakes like this always, when I write or speak English.

In the Japanese of 興味深い as "interest" is like you'd like to study this thing because I feel I can study this thing while interesting about it. 楽しみながら、勉強できそう！ この知識を高めたい！

と、いう場合に使うからです。
