Meeting up with friends

It was my day off today. (Or "Today was my day off.")

I met up with my friends and we enjoyed having a dinner and talking with each other.

It's been a long time since we last met last time. so (or and for a more fluid sentence) we had so many things to talk each other about.

Sometimes, when I listen to my friends Sometimes I am inspired from by them because there are different character personalities, experiences and interests between us.

Result:

Meeting up with friends

Meeting up friends

It was my day off today.
I met up with my friends and we enjoyed having (no article in this case >>>) a dinner/a meal together and talking with each other.
It's been a long time since we last met last time, so we had so many things to talk over each other.

When I listen to my friends, sometimes I am inspired from by them/get inspiration from them,
because there are we have different characters/personalities, experiences and interests between us. (this 'between/amongst us' makes an awkward sentence so I rearranged the wording)

You are unnecessarily starting new sentences with conjunctions - So, Because - you can simply use a comma ',' and continue the sentence.

Although we suggested quite a few changes and corrections, everything you said was perfectly understandable.
