Different versions of you in German? So I get the formality differences between when one should say du or Sie, but anyone have simple explanations for when euch or ihr should be utilized? I can't wrap my head around these variants.. Danke im voraus!

"ihr" is like "you guys" or, in Southern slang, "y'all" :) "euch" is the accusative/dative form.

"Sie" just uses capitalized 3rd person plural instead of 2nd person singular/plural. So just use the declension tables for 3rd person plural (that includes posessive pronouns etc.).

Simply put, "ihr" is plural of "du", and "euch" is plural of "dich". You should rather ask that in the Answers section, though, the Notebook is there to get your texts corrected by native speakers.
