I think your sentence is OK, especially in a conversation, but some people might think you need to explain a little more. So, it might be better to say それで、ニャンコについて書くことにしました。

今晩ニャンコは忙しすぎます。This is grammatical and quite understandable, but not very natural. You can say 今夜のニャンコは忙しそうです。

アクアリウムの観賞魚はもう寝ていますが、ニャンコは何か変だと思っているみたい or　思っているようです。 もの is OK here, but it is usually used when what you are talking about is clear to readers or listeners. So, 観賞魚 is better.
「見て、見て！」と足でガラスを打って or 叩いて鳴いています。Both ガラス and グラス are Japanese words for glass, but they have different meanings. They are confusing, so I think their pictures on google might be better word difinitions on a dictionary. I think 打つ is OK but sounds a little too literary or serious somehow. Perhaps it's just me... Anyway, I'm sure that 叩いて is common.

何でしょうか・・・あれ、アクアリウムのナマズが眠っていないようです。ニャンコはいつもそのナマズを見るとアクアリウムを足に入れようとします。

眠っていないそうです means you hear it isn't sleeping.

他の観賞魚のことは、そんなに気にしません。（いつも）よく見るからでしょう。（その）一方、ナマズはいつも 決まった場所にいて or 同じ場所に隠れていて、そとから見えません。だから夜に出てくるとき、ニャンコはびっくりしてナマズをよく見たいようです or ナマズを観察したがります。きっとナマズが面白いのでしょう。

びっくり is often written in katakana, but here in your journal it would be better to follow a basic rule. Speaking of which, some people might think 猫 is better ニャンコ in your journal, but I think ニャンコ is a good (or rather better) choice for your story about your cat.

I think it is a little confusing to say 面白い観賞魚 for ナマズ. 観賞魚 is a more general idea than ナマズ. This fish is already referred to in a spefic way, and people don't usually go back to a general name.

I didn't know where I should 面白い in one sentence, so I've made another sentence.

家(いえ) isn't usually used for a part of a water tank. It is sometimes used for an animal, but I think it sounds a little too conversational.

Plus, ナマズを鑑賞したがる is also a good expression, if you talk about your cat like a person humorously.

I think these sentences are fairly good, but I think it would be better to change the order to make it more clear.
