Please, help me with to see my mistakes.:
Pancakes are one of the traditional national dishes of Russian food.
Today I bought* buy buns with raisins (Or today I am going to* am buying buns with raisins?)

 

Depends whether you are talking in the past or future.

I buy buns with raisins. This means I do it regularly, maybe every day or once a week. (You can't use a specific date with this tense but you can say every day I buy buns with raisins)

 

I am buying buns with raisins. This means I am at the store buying them right now.

 

I will buy buns with raisins and I am going to buy buns with raisins. Both mean in the future I will buy the buns. Add a date to say when in the future.

 

Today I will buy buns, tomorrow I will buy buns, next week I will buy buns.

"Dishes" and "food" in this context are redundant, so I would go with one or the other like:

Pancakes are one of the traditional national dishes of Russia.

You could also remove "national" for the same reason since you are mentioning the country:

Pancakes are one of our traditional Russian dishes.

Note: these aren't really mistakes, just recommendations regarding style.

 

"Today I will buy buns with raisins" or "Today I am buying buns with raisins" sounds more natural to me.
