Note that Japanese is a little similar to Italian in the sense that one doesn't have to include Pronouns( I, he, she ) in quite a lot of situations. 

You can omit the 私

日本語を学べて嬉しく思っています。

私は日本語が好きです。

私は日本語大好きです。
私はうれしは日本語。「im trying to say i am happy learning japanese. how to i fix this one?」

If you want to say "happy learning japanese" 私は日本語が学べて嬉しいです。
