you can say 'perdón?' or 'cómo?', in Mexico we use a lot this word 'mande', which is the same as 'excuse me?

Informal: ¿qué? no te escuche bien. ( "te" = "you" informal)
Formal: Discúlpeme, no escuché bien, ¿Podría usted repetir lo que dijo porfavor? (usted = "you" formal )
