Why "Jestem kobietą" and not "Jestem kobieta"? Can somebody explain please!?

Polish collocations verb + noun require a proper grammatical case of the noun. The infinitive "być" in your expression needs a noun in the instrumental case:
Jestem (kim?/czym? = instrumental case) : studentem,
Jestem (kim?/czym? = instrumental case) : nauczycielem,
Jestem (kim?/czym? = instrumental case) : księgową,
Jestem (kim?/czym? = instrumental case) : kobietą.
"Jestem kobieta" is wrong, as "kobieta" is the nominative case and you cannot use it as you did.
Jestem (kim?/czym? = instrumental case) : studentem,
Jestem (kim?/czym? = instrumental case) : nauczycielem,
Jestem (kim?/czym? = instrumental case) : księgową,
Jestem (kim?/czym? = instrumental case) : kobietą.
