The old man has gray hair.
שיער שיבה seear seiva is a term for the white/gray hair which old people have . you can omit the seiva and say: לאיש הזקן יש שיער אפור. however the seiva emphasizes the fact that it is hair of an old man and not just gray hair (if you omit the seive it might be possible that a teen dyed his hair gray).
before the איש זקן you have to add ל because it is a necessary preposition in Hebrew. It's like יש לו, I don't really know how to explain it. Literally: To the old man there is gray hair.
