I think the word you are looking for is acidic. Astringent can mean sharp and penetrating, but it is usually used as a medical term. Astringent in terms of medicine means constricting, it is used to describe many acne medications.
I describe "astringent" as "it feels like I just sucked on a teabag". Your mouth feels slightly dry after tasting the food. It's commonly used to describe wine, and is a little different from "bitter" or "acidic".
