"In God we trust" is a sort of national motto for the USA. It means "We have faith in God."
The Deming quote is essentially a half-serious joke. He is saying that, unless you are God, you have to bring evidence to support any claims you make. We aren't going to simply trust you unless you present data ("information" or "statistics") to prove you are right.
