I don't care about what other people think about me or what I do. I don't pay attention to what other people think about me or what I do. I am not concerned about what other people think about me or what I do. What other people think about me or what I do doesn't concern me. What other people think about me or what I do is of no concern (importance/consequence/siginficance/moment) to me. ["moment" can mean "importance"]. Slang: I don't give a hang about what other people think about me or what I do. ["hang" is strong, and just begins to be impolite.] Slang: I don't give a hoot about what other people think about me or what I do. [Not as strong as "hang".]
Their opinion means very little to me. Formal
Who cares what others say? Informal
Sticks and stones! (From a rhyme, Sticks and stones may break my bones, but words will never hurt me!) This isn't at all rude, but quite familiar.
They can keep there opinions to themselves! - you don't want to hear it, it has no bearing on you

Hello Tara:
You have been posting some really terrific questions.
Let's look at your inquiry:

In how many ways I can say that I don't care what other people think about me or what I do but in polite ways?

.
I would do so like this perhaps:
I care very much about the opinons of certain persons whom I hold in high esteem.
I am not very interested in following social convention.
I look at these issues this way; To Each His Own.
I try to model my life after the ideas expressed in the book, "The Road Less Travelled".
I am an independent thinker, and I would rather that other people not impose their views upon me, you see?
"Live and let Live" is the way I see it.
Not everything in life is you know, Black and White. Some issues are a bit more complicated than that.
I don't want to get caught up in some sort of False Dichotomy. There are "Middling Propositions" you know, like "grey" areas. It is not all so simple.
I do not want to live my life like some kind of Social Stereotype.
I'm not some sort of "Puppet" you know? I want to offer a more considered opinon rather than some kind of "Knee-Jerk" reaction.
I think there can be some sort of Middling Proposition between the two extremes offered.
I respect what you are saying, but unless someone can present a logical argument or some kind of Objective Evidence, I don't want to go jumping to some sort of hasty conclusion.
or.... Remember what Bart Simpson says; "Don't---Have---A---Cow---Man!"
