It would make more sense to say
" I am an ex-kickboxing champion"
or
"I was once a kickboxing champion"
" I am an ex-kickboxing champion"
or
"I was once a kickboxing champion"
Lorraine O'Connell is correct, however to expand on her answer both of your statements do mean the same thing, but we would probably say them like Lorraine O'Connell said.
