"any" why did he wrote any without saying any other fruit?
"since" why did he put it at the last of the sentence?

The full sentence written out would be:
"The fruit on this tree, was riper than any other fruit that I have known since then."
By saying "any" the word other is implied, and understood. (like saying Hi, instead of hello)"
Since is just to say that [from that point on, nothing has come along that has been as ripe]
Usain Bolt ran so fast at the 2012 Olympics, that no one has come close to matching his speed since.
It would sound less awkward to say:
Since the olymics no one has been faster than Usain Bolt.
The fruit on these tree was riper than any I've known since.
Since I've known these fruit, I haven't found any others to be riper.

I think his uses the word 'any' as you already know what the topic is about which is the fruit on the tree.
As for the 'since', he is stating that the fruits on these true were the more the most developed for eating and harvesting he has ever seen before so those were the most ripe he has seen' as of yet.
I've also noticed a typo, the word 'these' should be 'this' as his only talking about ONE item. Or, maybe he was talking about more than 1 tree in which this case it would 'trees' - with an S at the end.
