The only needed change that I can see would be the removal of the word OF in the phrase
"thousand of pairs". Pairs is a word complete and of itself. It does not need the preposition OF.
So your sentence can be written:
In terms of Jack & Jones Co., while it will start the year with the sale of approximately 500 thousand pairs in January, the figures will drop abruptly to around 200 in February.
