The main thing to remember is that "ever" is not used by itself as the antonym of "never".
Historically, it used to mean "always" (for instance, in the King James Bible, "He will ever be mindful of his covenant"), but it's not used that way now.
"ever" can be:
1) As "not ... ever", which is a different way of phrasing "never"
I have never eaten oysters
I haven't ever eaten oysters.
I never went to Australia.
I didn't ever go to Australia.
Never put buttons up your nose.
Don't ever put buttons up your nose.
2) In questions, meaning "at any time" or "under any circumstances"
Have you ever eaten oysters?
Would you ever eat oysters?
