"We can make enough money out of it." is correctly said.
Personally I use "Off" when I want to turn off something, for example: "He turned off the light." I prefer using making money "out" of it. The use of the word "out" makes it correctly.
Both "make money out of" and "make money off" are actually right.
For me though, "make money off" may also be used to imply an unscrupulous method of generating income.
