오늘 저는 엄마랑 새우를 먹고 있을 거예요.
I was trying to say something along the lines of: "Today I'm going to eat shrimp with my mom."
Is it acceptable?

Nope, I'd say "오늘 저는 엄마랑 새우를 먹을 거예요.".

"먹고 있을 거예요" would be "I will be eating..."
