    ANSWER: Yes, of course "Love Interest" can refer to all of those.

    If I have a "crush" on you, which means that I feel great love for you, then you would be my "love interest.

    If you are my date, you could also be regarded as my "love interest".

    And of course, if we are lovers, we are each other's "love interest".

    The Literal and Figurative meanings are virtually identical.

    "Love Interest" can refer to a casual interest, as when someone wishes to date another person or see them "socially". Even if I call you on Thursday and ask you to attend a sporting event with me like a Soccer game on Saturday, it could mean that you are my "love interest".
    Of course, it could also mean that I am simply bored, and that I like you as a friend too.

    "Love interest" lacks specificity. It can mean that I am so obsessed with love for you, that I intend to ask you to marry me. It can also mean that I would really love to walk through the park with you on a sunny day, and hold your hand, if you would let me do so, for the very first time.

    The expression "love interest" is a kind of sanitized euphemism that a third party might used to characterize a romantic relationship, instead of saying girlfriend or boyfriend or lover. I don't think the people involved would use this phrase unless they were joking. "Do you have a love interest?"
