What does "there's that" mean in the text below?
Here's an extract from the Vampire Diaries. Stefan is a vampire looking like an ordinary guy who has to wear an old ring in order to be able to come out in the sunshine of the day.
STEFAN: I'm Stefan.
ELENA: I know. We have History together.
STEFAN: And English and French.
ELENA: Right.
[Stefan pulls a leaf out of Elena's hair.]
ELENA: Thanks. . . Nice ring.
STEFAN: Oh. Um, It's a family ring, yeah. I'm kinda stuck with it. It's weird, huh?
ELENA: No, no. It's just, I mean, there are rings and then there's that.
STEFAN: I'm Stefan.

I haven't seen the episode, but this is how I understand Elena's line:
"I mean, there are rings..." (common, everyday rings)
"...and then there's that." (that ring - it's very unusual)
