    They're all correct, but using "the" depends on the rest of your paragraph. As a basic answer, I agree with Brian: "Generally, Americans are taller than Chinese."

    The most natural way would be the first one, the term Americans and Chinese imply people:
    Generally, Americans are taller than Chinese.

    Yes, the first one is the best. Anyway, you don't need to add "s" after American because we're talking about people of the US in general. That means the word "American" is already in plural

    I agree with Brian but they are all correct. The last one would be the least natural of them all.
