Would you say it for something happened yesterday, last year, five years ago etc.?

    "That could happen to any one of us" means the possibility is still open but unlikely.

    "That could have happened to any one of us" means it was just from luck that it didn't happen to you in the past.

    The phrase "That could happen to any one of us." is fine.

    It would relate to something that was being discussed previously. That thing need not have happened, and if it had, that would be irrelevant here.

    So - you might have been talking about someone being hit by a car when crossing the street. You could say "That could happen to any one of us."
    The fact that someone else may have been hit by a car has nothing to to with the use of the phrase. You are simply stating the fact that it could happen.

    Tom (25 years old): Look at that old man! He is walking so slowly and he is hunched over! (Tom laughs)

    Mona: (25 years old): Don't laugh! That could happen to you when you reach his age!
