    Both sentences are fine and natural :)
    The difference between the two though is that saying 'I don't consider myself that fat.', with the added 'that' it means that to some point you do consider yourself a little bit fat :)

    Both sentences are natural, but have different meanings.

    I don't consider myself fat. (This would mean, in your own opinion, you are not fat.)

    I don't consider myself that fat. (This implies that you are someone else has considered you to be fat to a degree with which you disagree.)

    For example, suppose you go shopping for a pair of jeans and the sales person says: "What are you, a size 16?" Your response might be "No, I don't consider myself that fat. I'm a size 8."
