Delay would not be the best translation. "demorar" does not really mean that it is late, rather that it takes time. So it would be better to say "knowledge comes, but wisdom takes its time".

Respondendo ao que você perguntou: a sabedoria "demora" porque está relacionada com a experiência que se consegue com o passar dos anos, certo? Quer dizer, um jovem (em tese) não tem a mesma sabedoria que uma pessoa que já viveu muito...
O conhecimento se adquire em qualquer fase da vida.
