"There were green trees with trunks of dark smoke: THEIR LEAVES OPENED LIKE A WHOLE SPRING UNFOLDING IN A MOMENT, and their shining branches dropped glowing flowers down upon the astonished hobbits, disappearing with a sweet scent just before they touched their upturned faces."

They mean here Spring as in the season. "Spring unfolding" is when all the flowers start blooming and unfolding their petals, and trees leaves "unfold". Unfolding doesn't have to be literal, it can also mean to "reveal" so trees "reveal" new leaves, animals reveal themselves and their newborn babies, etc. Now generally Spring "unfolds" over several weeks or months, but this is saying that it is as if the entire(whole) Spring unfolded instantly(in a moment).
