Подозвав

I know the infinitive form of this verb is подозвать, but I don't understand what is the conjugation. I know it means "to call" I want to know why it ends in "в" which is an ending I have not yet seen.

There isn't such a part of speech as an adverbial participle in English, but in Russian there is.
Imperfective adverbial participles are usually formed from infinitives with the suffixes -а(-я), e.g. делать-делая, стучать(что делать?)- стуча (что делая?).
Adverbial participle aren't formed from the verbs :лезть, бежать, ехать, хотеть, звать, петь, гнить without prefixes.
    бежать-добежав, забежав, подбежав, прибежав
    хотеть-захотев,
    звать-подозвав, призвав,позвав
    гнить-загнивая
    петь-распевая.
Perfective adverbial participles are usually formed from infinitives with the suffixes -в, -вши, -ши.
    Украсть(что сделать?)-украв (что сделав?)
    Возвратиться-возвратившись.
"Подозвав" -that's also an example of a perfective adverbial participle.
"подозвав" - it's special form of verb (деепричастие), you can think about it as gerund (calling).

    Russian example:
    Подозвав официанта он оплатил счёт.

The English equivalent of this verb form is described in the book 'Raymond Murphy. English Grammar in Use. Fourth Edition' at 68.C.
According to it, 'подозвав' can be translated as 'having called', 'after calling' or sometimes as 'calling'.

If this helps, please could you have a look at my question at www.italki.com/discussion/60448 when you have free time? :-)

I'd like to add just a couple of things:
    1. This form is called Past Gerund (деепричастие прошедшего времени in Russian).
    2. It denotes an additional action which preceeds the main action in the sentence.
    3. All gerund form do not change (don't have conjugation).
    Подозвав официанта, он оплатил счёт.
= После того, как он подозвал официанта, он оплатил счёт.
Прочитав записку, он пошёл в магазин.
Сняв куртку, он вошёл в комнату.
