I think the subject that goes with the adjective 풍부하다 is 비타민 A와 비타민 C, so -가 is attached. So that literally means "Vitamin A and vitamin C are in abundance".

But why does 토마토 also have the subject particle attached?

If I was going to say this, I would say one of these:

이는 토마토가 비타민 A와 비타민 C로 풍부하기 때문입니다.
이는 토마토가 비타민 A와 비타민 C랑 풍부하기 때문입니다.
이는 토마토에서 비타민 A와 비타민 C가 풍부하기 때문입니다.

    Actually,i don't get what you're trying to say.Maybe that's because i don't catch your point.
    But, what i'm trying to say is that three sentences that you refer to sound strange and unnatural.
    We don't usually say that.But,in the second sentence,it's possible if we say like this "이는
    토마토가 비타민 A랑 비타민C가 풍부하기 때문입니다."
