The person who eats this way takes big, messy bites, which makes bits of the bread (crumbs) fly off (are thrown off) with such force that they reach the ceiling. I would say this is hyperbole, it is a idiom that apparently means the person is a messy, and enthusiastic eater.

    A petite pain is a small bread. In France, if you eat one, the crust tends to break up and fly all over the place. They're very tasty, but you end up sweeping the crumbs away after you finish.
    When horses eat, they eat standing up, often sending their food flying around them. The way this man eats his small bread reminds you of the way a horse would eat.
