『món um』What does this mean?

I founded this in a menu title of category in restaurant.

I think món is types but I don't really understand 『um』

    i think "um" means "om"
    it means a method about food which was fried and then put into enclosed pot with little water in it, boil in a relatively long time, to make the food and spices fragrant, tender and gelatinous substance secreted east (gelatine).
    The process mainly cooked by the heat of the steam buildup in the pot when "om"
    When processing the raw materials must be fried in fat then braised for water.
