What's the meaning of 限る here?

I can understand what the sentence means, but I can't understand why に限って is used here.

Is this sentence wrong?↓
If it's not wrong, then what's the difference in meaning between them?

Your understanding is right. The sentence works fine without “に限って”, and semantically there is no difference between the original and your own sentence. “に限って” just emphasizes who says that.

Note that the phrase is just only used in figurative way, meaning the tendency. If I translate it into English, I’d say as follows.

We often hear that, but often it came from those who aren’t fat. They’re just obsessed with being slim.
