In Italian, for the verb "to be", how do you know when to use essere and when to use stare?

Good the answer of Daniel. I simply add that we use the auxiliary stare instead of essere in our progressive form. So for instance "I am walking" = "io sto camminando".

Preso dal sito dell'Accademia della Crusca: Il verbo "stare" è usato spesso al posto del verbo "essere", soprattutto in frasi che esprimono il comportamento o lo stato d’animo d’una persona: «Stare attento», «Stare in ansia», «Stare sulle spine», oppure in frasi che contengono un ordine o un’esortazione: «Stia zitto!», «Sta’ seduto», o in frasi fatte: «Se le cose stanno così...» In altri casi i due verbi non sono intercambiabili: NON si può dire o scrivere «Sto nervoso», «Sta assente»...
