Identifying the "erre" sound in Italian I'm a little confused as to when to roll the R and when not to. I couldn't really find anything solid but someone told me that an R with a vowel on either side isn't rolled but an R at the start of a word or next to a consonant is.

Italian "r" is always the "voiced alveolar trill" /r/ also named trilled "r", rolled "r" or rolling "r". If single it can reduce its vibrations but still remain a trill and never reach the "alveolar flap" /ɾ/.
