Is my usage of 结合 correct? I am trying to say "this is a combination of a sandwich and a computer." 这是一个三明治和电脑的结合。

Agree with You Peng. It can be either 这是一个三明治和电脑的结合体 or 这是三明治和电脑的结合. For the reason why "结合" doesn't need the article "一个", but "结合体" needs, I think you can understand it as 结合 is uncountable but 结合体 tends to be countable. Hope that helps!
