how to learn numbers I am a little confused as to which way to end a number when describing something (example: sanko, sandia, sanmai)

The examples you gave are all using counters (example: san MAI - mai is the counter for flat things, ko is the counter for small things, ect) I had to memorize them separately to get any good at them, and there are many different ones.(there's one specifically for animals, and long thin objects and others) Essentially use the counter that best describes the object you want to count.

I think the second one is "san dai" for cars or machines. We have so many "counters / suffixes to count something" but you don't have to worry about too much. Please learn them little by little with the sentences or things you want to count. Getting accustomed to them is one of the best ways in my opinion. Good luck!
