How can we use Kanji words ? we know that there are Kon and on in Kanji's. but how can we know that that word using kon or on in the sentence ?? and also if we want to use kanji. which one that we use ?

Usually I have seen that if a Kanji is only 1 Kanji by itself it is usually On reading like 水 (mizu-water) but Kun reading when it is a compound like 水曜日 (suiyoubi-Wednesday). This is not a rule though.

Unfortunately, I never got a definitive answer from my teacher either. We had to study a lot of words and phrases in class, so we ended up memorizing the pronunciations. It does become a bit second-nature later on, but I haven't figured out how to explain how to pinpoint what the reading should be in certain combinations. Your best bet would be to practice vocabulary and you'll start to see a pattern.
