As a foreigner, I can confirm that Hemingway is very easy to read. I read him many years ago, when I starded learning English.

There are countless answers and it depends on your level, but if you really want to get into some classic literature with relatively simple language I would recommend "The Old Man and the Sea" by Ernest Hemingway. His style is very simple and the book is short, but it still won him the Nobel prize for literature!
