How can I say that? If somebody isn't playing music on the piano, he is just hitting random keys one at a time.

How you've expressed it is just fine. You could perhaps say "He's tinkering with the piano" or "He's messing about on the piano". I'm not sure we have any kind of fixed expression for this.

Это не идёт к делу, но может быть будет Вам интересно: Есть такая забавная идиома, "to tickle the ivories". Дословно: щекотать слоновую кость Но идиома означает "to play the piano." Пример: "When I was younger, I would tickle the ivories every day." = I would play the piano every day.
