Whats the difference between " Eto " and " Ano " when you are thinking about what you want to say?

They're pretty similar! But they're used differently even though they both roughly mean "umm" When you say "ano" it's used if you know what you want to say but you don't want to be so direct about it. When you use eto it's usually used to buy you time when you're thinking of what to say next :)

What she said is totally correct. And we sometimes use Ano when we speak to someone unfamiliar.
