Could you tell me what this sentence means, please? "If you can light the spark of curiosity in a child, they will learn without any further assistance." What is "without any further assistance" ? Thank you in advance.

"without any further assistance" means "on his own, even if you don't help him anymore". So, the whole sentence may be paraphrased: If you arouse the curiosity of a child, they will learn on their own even if you do not continue to help them (because now they are driven by the curiosity to know).
