Because 'bus' is also a verb:
to remove dirty dishes from (a table at a restaurant)
To bus a table is to clean it up, basically.

One possible reason is that the trolley that a bussie (busboy/KP) uses could be called a "bus" (ie. in the sense that it transports a lot of things).
I'm reminded that computing uses "bus" in the same sense (ie. transporting things).
