Hi Juan, i am from Naples, a italian south area famous for dishes like ''pizza'', ''mozzarella'', and ''pasta'' created by Gragnano town (a little contry near Naples). Besides, in Naples it drinks a better expresso (short) coffee of Italy; and during Easter, it possible eat full bread called ''Casatiello''.
Anyway, in all Italy regions you could eat good pasta: you can choose a types of pasta that talking before Martina like Ragù Bolognese or Risotto alla Milanese. But my prefer dish is ''Spaghetti con Pesto'', that is a pasta from Genoa with green sauce based on garlic and pine nuts. In Genoa, you'll find other delicious food, called ''Focaccia'': it is a light and little bread with oil for eat as ''antipasto'' before main dishes.
At the end, remember go to Florence and Siena for eat slices of double meat as ''Bistecca alla Fiorentina'' and ''Pici al Cinghiale''; finally, try in Milan the ''Cotoletta alla Milanese'', delicious breaded meat.
