Is the "interval" apposition to over three minutes ? or not?
What does the word exactly mean here? in each time or something?
The word "interval" is just referring to a period of time.
The sentence could have been written like this with no change in meaning:
"He also noted that some exuberant laughers produce heart rate over 120 beats per minute for periods of time over three minutes"
