All of these sentences are considered incomplete in English. "While she was doing so..." requires a second, accompanying action. If you add the accompanying action, the first or second one would be fine, depending on whether there is one or many bars to be rattled. Otherwise it should be rephrased "While she was doing so, she rattled...and clattered" with the past tense.

These sentences don't make sense - "while she was doing ...what" Do you mean to say that she was doing something (which has already been stated in a previous sentence) while rattling and clattering things"? For example, "She was complaining loudly about the injustice of it all, while rattling etc"? I am not sure what a "bar's grate" is, but of the four options you provided the last sentence seems to make the most sense from an English perspective.
