You can say "It's nice to meet you, [name]" or "It's nice to meet you too." Both are perfectly acceptable. You can also say "It's nice to meet you too, [name]." :)

Both ways are correct and sound perfectly natural. "Nice to meet you, too" is probably more common, but I believe using the person’s name makes a friendlier impression, and I believe it would also help you to commit the name to memory.
