My name in japanese My first name is Olivier. I'm french, so it's pronounced O LI VI E. Am I right to think it should be written as オリヴィエ ? Do all japanese know and understand that ヴィ sound? If not, what would be a close and common approximation ?

I think オリヴィエ is correct as other person said. And you can also use "オリビエ". This is a basic style when you want to write VI sound using katakana.
