Is 'stiff' in the phrase 'until stiff' an adjective? Here is an example from a dictionary: Whisk the egg whites until stiff. Is 'stiff' an adjective? I think this usage seems the same as the expressions such as 'where necessary' or 'if necessary'. What do you think?

Yes, it's an adjective. The whole phrase would be "...until they are stiff." Definition 4: http://www.macmillandictionary.com/dictionary/british/stiff_1
